Roast Beef Sandwich

WOW! This was a huge save. A couple nights before I had cooked this roast for hours nice and slow, but near the end I got a headache, and the baby needed nursed so I had the hubby take over (who doesn’t really cook). Sooo the entire dinner got burnt to shreds, and I was so bummed.

At the end of the meal I gave the dog all the extreme roasted veggies (she’s old and it was a treat to get people food), and went to work shredding the roasted beef, and cutting off the very top layer which was very burnt. I put it in the fridge to figure out what in the heck I was going to do with all this basically inedible meat.

Looking on line I saw a bunch of Italian crockpot beef recipes so I whipped up my own version, and a prayer for the ‘new’ dinner I was making.

Recipe:

-1 small roast shredded up

-3tbls Italian spice mix (I make my own using this recipe) https://www.pinterest.com/pin/559572322441665442/

-1/2 cup Italian dressing (I think the Olive Garden really made it)

-enough water drizzled on to keep it hydrated

Cook low and slow until it’s nice and bubbly and the seasonings are soaked in well.

I shredded up a some mozzarella off a block and added some on some homemade rolls I made for this. The girls said no thank you but the boys were ALL about this sandwich.

You could also easy enough add all this into a crockpot and cook on low for 6-8 hours, and shred it, then mix it all up. I think it would work just as well.

I’m just so glad we found a new recipe for second day roast!
