Pumpkin Spiced Chex Mix

You’ll fall in love with this late night dessert chex mix!

  • 1/3 cup packed brown sugar
  • 6 tbls butter (Kerry Gold best)
  • 1/4 cup honey
  • 1 tbls pumpkin pie spice
  • 6 cups of any Chex combo
  • 1&1/2 cups pecans

Pre heat your oven to 400*f. Line a large rimmed sheet pan with parchment paper. In a sauce pot add your butter, brown sugar, honey, and spices on low. While that’s heating take a large bowl to add your chex mix and nuts. Once the mixture is completely melted, and mixed thoroughly you’ll immediately and carefully pour over your mix, and stir gingerly so you avoid breaking cereal. Once mixed well, which will take a good 30-60 seconds, you’ll transfer to the baking sheet you’ve lined with parchment. Bake for 10-15 minutes and stir, then add in for another 10-15 minutes. You don’t wan to go to much longer than that becuase it will still keep cooking once out. The mix will turn a bit candied so while it’s cooling stir often or you’ll have very large chunks.

Extra:

I used rice and corn Chex which is why I added the honey. You can use whichever Chex you have or think sound good. Chocolate, honey, or cinnamon sugar would be really good. If you use the cinnamon or honey I’d cut back on the brown sugar, and the honey. I didn’t have any but Honey Cheerios would be good also.
