Crust less Quiche

My Husband and I love doing a quiche for brunch or dinner, and we usually have a side salad to go with it. We like ours warm but it’s best just above room temp, although you could have it cold.

I start off by adding a nice table spoon of butter to a deep dish pie pan and placing that in an oven while it preheats to 375*f.

While that’s melting and heating up I use my 4 cup measuring cup to crack open 4 eggs and whisk a bit. Then I add about 1/2 cup of heavy cream if it’s a special occasion and then a 1/2 cup of milk. We usually just use 1 cup of coconut milk though. After that is mixed through well enough I add in all the spices and mix ins and give that a stir.

I then take out the pie pan and carefully pour my mixture into the dish and place in the oven to cook for about an hour.

It’s very important to let it cool for a little while so it finishes setting up.

The great thing about this dish is you can alter it to your liking so easily. Gluten free, dairy free, lacto-ovo-vegetarian diet, or you can add ALL the goodness lol.

Our Most Favored Quiche

Ingredient:

  • 1tbls butter (highly recommend kerri gold)
  • 4 large eggs
  • 1 cup coconut milk OR cows milk OR 1/2 cup heavy cream and 1/2 cup milk
  • 2 dashes of garlic powder
  • 2 dashes of onion powder
  • dash of salt
  • couple grinds of pepper
  • 1/3 freshly shredded cheese
  • 1 large apple chicken sausage (we use and love the Trader Joes brand) or 3-4 small breakfast links
  • 3 cups spinach cooked
  • 1- 8oz package baby bella mushrooms sauteed in some worcestershire sauce

Directions:

Get your sausage into a toaster oven or in a skillet and cook completely through. Place your pie pan with a nice health table spoon of butter into the oven and set your oven to 375*f. Saute your spinach until nicely wilted then get your mushrooms going in a few dashes of worcestershire sauce. While the mushrooms are going crack and whisk up your eggs, then add your milk(s) and whisk again. Add all your spices and mix ins once they are ready. Then slowly and carefully pour into your pie dish and place in the oven and back anywhere from 50-60 mintues. Once insert comes out clean pull from oven and let set for at least 15 minutes.

I garnished with fresh chives from our garden but you could always omit that or add fresh parsley instead!
