I love quick, easy, real, comfort food. For this recipe it’s a one pot wonder also which makes it even that much more amazing.
Ingredients:
- 1 Can of biscuits
- 1 cup milk (skim, 2%, whole, canned, powered {hydrated})
- Flour
- 3 tbls butter
- 4 cups chicken broth (either a box, can, fresh, or my fav the better than bullion mixed with hot water to make up a carton)
- Salt
- Pepper
- Garlic powder
- Onion powder
- Thyme
- Rosemary (*optional)
- Bag of mixed frozen veggie
- 2 cups of shredded chicken
- ***Water if you need it at the end to help make it not so thick***
Directions
Start by getting all all your biscuits out and rolling them out flat in a nice amount and then cutting into strips then cut one more time the other way to cut the strips in half. I like to use a pizza cutter for this to make for quick work. Once all of them are done set aside, you can even do this ahead of time and place in the fridge till ready.
In a large pot, I like a good dutch oven, place your butter in it an melt down then add your milk and broth and bring to a boil. Once it’s boiling add your ‘dumplings’ and let boil for 10-15 minutes on a low rolling boil while stirring occasionally. They will PUFF up but don’t worry they go down. Then add in your chicken, spices, bag of veggies, and cook till it’s nice and thick.

When you go to reheat just add a good splash of milk. We don’t own a microwave and use our stove top. Just use a pot with a lid, and set on low to medium, and stir occasionally till dumplings and chicken are cooked through.
