Waste not want not

Our poor baby got the flu that we all (minus daddy) got, and the pediatricians office told us to give him warm apple juice. Well during this whole Covid_19 thing we weren’t going out just for apple juice while we are all sick already. So I made some fresh with the kids. This was a great lesson for the kids to help me with anyways so it was a win win win all around.

However, what do you do with all the pulp that’s left over from the juicing? For us I like to mix it into things and use it up a lot of the time, or I’ll add it into our compost bin. Since the kids were ready for lunch I decided to try an apple fritter kind of pancake. The only issue was neither the husband nor I remember to pull milk out the night before from the freezer.

Here comes another creative idea. Since i’m a baker I usually have powdered milk on hand and thankfully I had some on hand last week. (We only have one more pouch left, and the stores were totally out of it. So since everyone else is buying it might as well help you with a recipe for it!) So I mixed up a batch and let it sit for a while well I got everything else ready.

All I did was use my go to basic pancake recipe and added the pulp and used the dried milk instead, but only used 2 cups vs 2&1/4 cups and I added about a tsp of cinnamon.

These pancakes were honestly one of the most tasty pancakes I’ve made. They were so sweet that the kids didn’t even use syrup. I couldn’t believe they ate them ALL, and not a single pancake was left.

Ingrediants:

  • 6tbls melted butter and set aside to add at the end when it’s cooled a bit
  • 2 eggs
  • 1/2 tsp sea salt
  • 2&1/2 tbls baking powder
  • 1 tsp vanilla
  • 2 cups milk (can add your hydrated powder milk here!)
  • 3 cups flour
  • The pulp from your juicing (or just use the small shred on a grater and grate one apple skin and and all)
  • 1 tsp cinnamon

Directions:

In a bowl whisk together your eggs, sea salt, baking powder, vanilla, and cinnamon together until it’s puffy and light in color. Then add your flour and milk and mix until well combinted and mostly smooth. Last add in your Pulp (or grated apple) and the melted butter and whisk in till combined.

Use a scoop to pour out onto a greased griddle or pan. I like to use butter for it. Cook on a low to medium setting and flip when bubbles start to form.

This would have been so good with whipped cream but we didn’t have any at the time.

If you’re wondering about the last 2 cups of milk don’t worry I just used it to make up some oatmeal for dinner.
