Rice and Beans Wrap

Since this is my second leftover recreation recipe I’ve decided to make it into a running section labeled “Leftover Rewrite”. These will be easy recipes to transform your leftovers into something even the leftover haters will enjoy!

We had a bunch of rice left from the dinner the night before, and I had a little bit of cheese and sour cream that needed eaten up. I pulled a can of black beans and rinsed them well and added a ton of my taco spice mix with some water. Heated that all through and smeared some sour cream and sprinkled cheese and voila dinner was served.

This was so quick, super cheap, and very filling. Like Melissa d’Arabian says “The most expensive ingredient is the one you throw out”.

Ingredient:

  • Rice (it was about a cup of cooked leftover rice)
  • Veggies (we had about 1/3 c corn but carrots, peas, anything would be great)
  • *2-3 tbls taco seasoning (generous heap)
  • 1 can or cup of black beans rinsed very well and drained
  • 1/4-1/2 cup water to let everything combine and cook evenly
  • optional
    • Sour cream
    • Cheese
    • Chives
    • Salsa
    • Lime wedge

Directions:

Dump everything but your optional toppings into a pan with a lid and stir well, and let simmer away till water has reduced to nothing. Then grab whatever kind of shell you’d like, and smear on your sour cream first then add cheese and whatever else. Wrap it up and enjoy!

This dish would even be a great addition to your meatless Monday meals if you do that!
