In a bowl add all the dry ingredients, and whisk together well. Then in large mason Jar or 4 cup measuring cup add in your wet, and whisk very well together. I took it a step further and set out my muffin trays, cupcake scoop, and cooking spray so I would make as little ruckus as possible to keep my peace a quiet going. In the morning I added my wet to my dry mix, then used my scoop for the muffin tins, and put in the oven. While that was baking I was able to do my bible study. The kids are always so elated to walk downstairs and give me a big smile saying “smells like muffins/pancakes”. As a sahm mom it’s just one of my very favorite smiles.
Ingredients:
- 2 cups GF (or AP) Flour
- 1&1/2 tbls baking powder
- 1/2 tsp salt
- 1 tbls ground flax seed
- 1 tbls chia seeds
- 1 tbls nutritional yeast
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup mix ins chocolate chips, nuts, berries, etc
- 1/2 cup oil; your choice
- 1 cup of milk; your choice
- 2 eggs
- 1generous splash of vanilla (measure with your heart!)
Directions:
In a larger bowl add all the items from Flour- mix ins and mix well, cover, and set aside. Then take all the items from the oil-vanilla and mix well in a container, cover and store in the fridge. The next morning take out the wet ingredients and start your oven at 350 degrees F. Mix your wet into your dry and scoop into your sprayed muffin tins (this makes 24 nicely). Set a timer for 18-22 minuets, make sure to check at about 16 minuets. Everyone’s oven is different so it depends on your oven on how long something will take to bake.
You can add sugar crystals on the top before baking also for something fun like in bakery, but since there is already so much sugar in them I only do it for birthday, Valentines day, etc.
Extras/Notes:
- You can use AP flour just cut the baking powder down to 1tbls
- You can used melted butter as your oil but it will just solidify in fridge so I’d suggest if y
- ou want to use butter do the melting in the am.
- Make sure to add your mix ins to the DRY ingredients. If you choose fruit mix them in the dry ingredients before adding your wet so they have a better chance of not sinking to the bottom.
- It was really easy to add all the ingredients to a 4cup glass measuring cup so I didn’t dirty anything else and could mix it easily cover with a wax wrap and dump and scrap into my bowl in the morning with ease.
