We just love these muffins, they taste great, packed with some yummy nutrients, and are so fun for a ghoulish Halloween breakfast!
Ingredients
- 2 very packed cups of spinach*
- 1 cup milk
- 1/2 cup greek yougurt
- 2 eggs
- 1 tsp vanilla
- 1 tbls chia seeds
- 1tbls flax seeds
- 1/2 tsp salt
- 1 tbls baking powder
- 1 cup sugar
- 2& 1/2 cups flour*
- 1/2 cup mini chocolate chips*
Directions:
Preheat your oven to 350*F, and spray 2 12 cup muffin tins. Add the spinach and milk to a blender and blitz that until it’s as sooth as possible. Then to a large bowl I add all of my wet ingredients stir well then sprinkle on the flour and then the baking soda, and whisk to combine, and no lumps can be seen. Sprinkle on your chocolate chips and fold in. Using a cupcake scoop I fill each prepared muffin cup and cook 18 minutes. (May take 15-20 minutes depending on your oven.)
Extra Notes
*I filled my nutribullet very full of spinach then added the milk
*I use either organic flour or 1:1 gluten free flour
*Honestly I’ve never once measured the chocolate chips, that’s a measure with your heart ingredient. I just sprinkle the top of the batter until it’s covered well enough.
*I just love that we didn’t need to use any food coloring and the color came out so vibrant and fun. We’ve been making these for years and they know there is spinach in them and always so amazed you can’t taste it.
I pop a couple into zip locks and put in their morning backing breakfast bin so it’s ready when they are. They last nicley for a few days so if you need them longer toss them in the freezer and just pull them out the night before and they’ll be defrosted perfectly for your little ones.
You can also use a mini muffin tin to make bit size or better sized ones for younger ones, just cut back on the cooking time and check after 8 minuets.

These do look amazing but I would bet $100 that my kids would refuse to eat them because of the color!! Little rats, haha. I will have to try sometime. I have to sneak spinach in smoothies and stuffed shells 😉 But maybe I can spin it as a Halloween spooky treat and they will go for it.
