I love making this cake all throughout the year. It’s an easy replacement for apple pie or apple fritters that will please any crowd. Over the years I’ve adapted this to make it the best version out there (in our opinion anyways).
Ingredients:
Cake:
- 1 box of yellow or white cake mix
- 1 21 oz can of apple pie filling
- 4 large eggs
- 1 and 1/2 tsp pumpkin pie spice
Whipping cream:
- 1 pint heavy whipping cream
- 1/2 tsp vanilla
- 2-3 tbls powder sugar
Directions:
First preheat your oven to 350*F and spray your 9×13 with a baking spray. Dump your cake mix, eggs, and spice into a bowl. Then open your can of apple pie filling and take some kitchen scissors and cut up all the big chunks. This may take a minute or so to make sure your getting everything cut nice and small. Add your pie filling into the bowl and use a hand mixer to whip up thoroughly for a minute or so. Pour batter into your prepared pan and place in the preheated oven for 35-40 minutes.
While the cake is baking you can whip up the whipped cream. Add the cream, sugar, and vanilla in a bowl and beat on high until your desired consistency is achieved. Store in the fridge until your ready to eat.
When cake starts to pull away from the pan or the tooth pic comes out clean pull the cake an let cool.
Extras
- You can easily use just cinnamon vs the pumpkin pie spice mix, but the spice mix has all the warm flavors of fall that take it over the top.
- Pam baking with flour is the best spray I’ve ever used. The target brand seems to work just as well also but it seems to take a little elbow grease to clean the pan after.
- I like to add the whipped cream into a piping bag and pipe on big dollops onto the servings. This make it feel extra fancy as though you’d spent an easy $6-$7 on dessert at a restaurant. You could even go a step further and sprinkle some cinnamon on top.
