We had some basil that needed to be trimmed off our plant so the hubby suggested caperse salad. I was hungry for chicken, and on my very short walk to Aldi I thought this recipe up. It was so so so so good! My husband immediately said I need to add it to our list of go to meals.
Ingrediance:
- Rice
- 1/3 cup balsamic vinegar (or balsamic glaze)
Caperse Mix:
- 1 large beef stock OR 2 small roma tomoatoes
- 8 oz fresh mozzarella
- 1/4 cup fresh basil
- sea salt
- fresh ground pepper
- Olive Oil
Chicken:
- Tenders or thighs
- Sea salt
- Pepper
- Garlic powder
- Dried basil
- Dried oregano
Directions:
Start off by getting your rice started. I like to use 2 cups of rice with 5 cups of water, and add a tbls of Better Than Bullion. I bring it up to a hard boil stir and turn down to a 2 on my stovetop. Next you will just use a sprinkling of the seasonings onto your chicken, and cook that thoroughly. While those two things are cooking you’ll put your balsamic vinegar in a sauce pan and cook down by half turn off and let cool so it thickens. Now that you have those three things going dice up your tomato and cheese into small chunks. Then chop your basil into ribbons. Add those 3 ingrediencies into a bowl drizzle olive oil, grind some pepper, and shake in a small bit of salt, and mix well.
Once all those are done put a bed of rice down, add some chicken, spoon on your caprese mix, and drizzle on your homemade balsamic glaze (or our premade easy go to glaze).
*Note: do not drain the liquid from the caprese mix, you’ll want that to add to your rice.
