Ingredients:
- 4 smashed bananas
- 1 cup pumpkin
- 1 tablespoon chia seeds
- 1 tablespoon falxseed
- 2 eggs
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 1/2 cup greek yogurt
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground clove
- 1/4 teaspoon salt
- 1 tablespoon baking powder
- 2 cups flour
- mini chocolate chips (about a heaping 1/3 of a cup)
Directions:
Preheat your oven to 350*F, and prepare your muffin tins. In a bowl add all your ingredients but flour, baking powder, and chocolate chips, and mix well. Then add your flour and sprinkle on your baking powder and mix again just until combine. Lastly I measure with my heart the chocolate chips just just coat the top and fold in a few times. I use a scoop to ensure equal portions into a regular sized muffin tin, and bake for 20 minutes. These are very wet moist muffins, and need a few extra minuets. I let cool for 5 minutes in the tins then remove to finish cooling on a cooling tray.
